Over Champagne Gosset

In 1584 maakte Pierre Gosset, burgemeester van Aÿ en wijnbouwer, vooral rode, stille wijnen met de oogst uit zijn eigen wijngaarden. Dit maakt van Gosset het oudste wijnhuis in de Champagne. Echter in de 18e eeuw veranderde de productie van stille wijnen gemaakt in en rond Aÿ naar bubbels.

Vinificatie

De dosage voor de Grande Réserve Brut is 8 gram per liter. De malolactische gisting wordt met opzet gemeden, om al het primaire fruit zoveel mogelijk in de wijn te behouden. De wijn wordt minimaal 4 jaar in de kelders bewaard, alvorens de dégorgement plaatsvindt.

Chardonnay (43%), Pinot Noir (42%), Pinot Meunier (15%)

Wijn-spijscombinatie

Zeer aangenaam aperitief, maar ook een goede begeleider van tapas, gerechten met gevogelte, schaal- en schelpdieren, Comté of Parmezaan.
